Step by Step Method

Step 1

In a small bowl mix together ricotta cheese, red pepper flakes and paprika, set aside.

Step 2

In large skillet, heat oil on medium-high. Add onion and salt; cook 10 minutes, stirring often.

Step 3

Add diced tomatoes and cook 2 minutes.

Step 4

Meanwhile cook linguine per package directions.

Step 5

Toss tomato mixture with linguine.

Step 6

Divide between four plates.

Step 7

Top each plate with 1/4 cup of ricotta mixture and 1 tablespoon of Parmesan cheese.

Step 8

Garnish with basil leaves.

I scaled back for one serve though only used 3 ounces of pasta as that is my portion size and even on that I could not eat the whole dish and have enough left over for lunch with a salad but what I did eat was delicious and look forward to having again as it is so simple and quick to make but know you will have a great meal to sit down to and devour. Thank you TeresaS made for Only The Lonely tag game at FF&F.
