Ingredients

The ingredients are:
  • 1/4 cups olive oil
  • 1 large yellow onion, thinly sliced
  • 1/2 teaspoon salt
  • 1 can (28 ounce) diced tomatoes (drained)
  • 1 pound linguine pasta (cooked, or fettuccine)
  • 1 cup ricotta cheese
  • 2 teaspoon crushed red pepper flakes
  • 1 teaspoon paprika (smoked)
  • 1/4 cup grated Parmesan cheese
  • Basil leaves, garnish

How to Make

  • Step 1: In a small bowl mix together ricotta cheese, red pepper flakes and paprika, set aside.

  • Step 2: In large skillet, heat oil on medium-high. Add onion and salt; cook 10 minutes, stirring often.

  • Step 3: Add diced tomatoes and cook 2 minutes.

  • Step 4: Meanwhile cook linguine per package directions.

  • Step 5: Toss tomato mixture with linguine.

  • Step 6: Divide between four plates.

  • Step 7: Top each plate with 1/4 cup of ricotta mixture and 1 tablespoon of Parmesan cheese.

  • Step 8: Garnish with basil leaves.
