Step by Step Method

Step 1

On a work surface place 4 bread slices and on each slice put 1/2 cup cheese and top with 2 tomato slices and 1 tablespoon basil. Top with remaining bread slices.

Step 2

Heat a large skillet over medium heat; coat pan with cooking spray.

Step 3

Add sandwiches to pan; cook 3-5 minutes or until lightly browned; flip sandwiches and cover and cook for a few more minutes or until cheese melts.

I scaled this back for one sandwich and used wholemeal/wholegrain bread and added a little salt to my tomato slices otherwise made as per directions and I just love the taste of the basil and tomatoes with the gooey cheese, thank you ellie, made for Billboard Recipe Tag game. UPDATE - made again and thoroughly enjoyed thank you once again ellie.
