"This recipe may be made with tortillas as the base, toast, flat bread, a "Fold It" or even a pizza shell. I used Whole grain bread toasted in posted recipe but used a "Fold It" when I made it."Fold It"s are not in the ingredient data base but they are low carb and calories (110 cal). A lovely easy Brunch dish. Repeat as many times as you wish for more servings. If you wish use 4 slices toast and serve 4 with the recipe."

Step by Step Method

Step 1

Heat your salsa for 1 minute in a skillet large enough to hold the eggs

Step 2

Crack the eggs one by one into a smalll bowl and slide into the warm salas

Step 3

Cover with a lid

Step 4

After 1 minute sprinkle on the feta cheese

Step 5

Serve 2 eggs on each slice of toast (or other base)

Step 6

Season with salt & pepper

I love eggs so I made 1 egg, cutting down the recipe. I used Fat Free Feta to lighten up the fat. Great breakie Bergy! Linda
