  • 2 slices (2 ounces) whole grain bread (toasted or your favorite base)
  • 1/4 cup salsa (hot, medium or mild)
  • 3 tablespoon sweet onion, chopped
  • 1/4 cup feta cheese, crumbled
  • 4 large eggs
  • Salt & pepper to taste

How to Make

  • Step 1: Heat your salsa for 1 minute in a skillet large enough to hold the eggs

  • Step 2: Crack the eggs one by one into a smalll bowl and slide into the warm salas

  • Step 3: Cover with a lid

  • Step 4: After 1 minute sprinkle on the feta cheese

  • Step 5: Serve 2 eggs on each slice of toast (or other base)

  • Step 6: Season with salt & pepper
