Step by Step Method

Step 1

Season your chicken with salt, pepper and paprika.

Step 2

Heat stock pot with oil

Step 3

On saute the onions, green peppers and garlic.

Step 4

Add the chicken pieces ,starting with the dark meat and let them brown a bit about 5 minutes on each side.

Add the wine, chicken stock,bay leaf and carrots.

Step 6

Cover and simmer on low for 45 minutes. Add your potatoes and green olives adjust seasoning. Cover and simmer another 15 minutes until the potatoes are tender.
