Ingredients

The ingredients are:
  • 4 pound whole chicken (cut up)
  • 3 cups onion, minced
  • 1 cup green bell pepper, chopped
  • 5 cloves garlic, smashed
  • 1 bay leaf
  • 1/2 cup chicken stock
  • 1/2 cup dry white wine (can use dry sherry)
  • 2 cups carrots, cut in chunks
  • 1 pound potatoes (red potatoes ,cut in chunks)
  • 1/2 cup olives (pimento-stuffed)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 cup olive oil

How to Make

  • Step 1: Season your chicken with salt, pepper and paprika.

  • Step 2: Heat stock pot with oil

  • Step 3: On saute the onions, green peppers and garlic.

  • Step 4: Add the chicken pieces ,starting with the dark meat and let them brown a bit about 5 minutes on each side.

  • Step 5: Add the wine, chicken stock,bay leaf and carrots.

  • Step 6: Cover and simmer on low for 45 minutes. Add your potatoes and green olives adjust seasoning. Cover and simmer another 15 minutes until the potatoes are tender.
