Step 1: Season your chicken with salt, pepper and paprika.
Step 2: Heat stock pot with oil
Step 3: On saute the onions, green peppers and garlic.
Step 4: Add the chicken pieces ,starting with the dark meat and let them brown a bit about 5 minutes on each side.
Step 5: Add the wine, chicken stock,bay leaf and carrots.
Step 6: Cover and simmer on low for 45 minutes. Add your potatoes and green olives adjust seasoning. Cover and simmer another 15 minutes until the potatoes are tender.
