Step by Step Method

Step 1

In large nonstick skillet, heat oil; add chicken. Cook over medium-high heat, turning once, 4 minutes, until browned on all sides.

Step 2

Remove chicken from skillet; set aside.

Step 3

In same skillet, cook onions, stirring constantly, 5 minutes, until softened.

Step 4

Stir in apples; cook, turning apple slices occasionally, 3 minutes, until apples are golden brown and tender.

Step 5

Add cider to apple mixture; bring liquid just to a boil.

Step 6

Return chicken to skillet; cook, turning chicken as needed, 4 minutes, until chicken is cooked through and juices run clear when pierced with fork.

Step 7

With slotted spoon, transfer chicken to serving platter; keep warm.

Step 8

Stir brandy into apple mixture; cook 3 minutes, until mixture is bubbling and apples and onions are glazed.

Step 9

With slotted spoon, arrange apples and onions around chicken; drizzle evenly with remaining juices in skillet.

With just a little bit of prep, this is a company-worthy dish, and one I will make again, especially in the Fall. It goes with Autumn tastes! With the onions and then the apple slices being caramelized, it looked wonderful, but then, with the addition of the apple brandy, the sauce took on a caramel-like glaze, and the smell and the look of it was pure heaven right there in the pan. We loved this! Thanks, lazyme, I will keep this in my file. YUM!
