Ingredients

The ingredients are:
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 16 ounces fresh boneless skinless chicken breasts (four 4-ounce breasts)
  • 1 tablespoon oil (+ 1 teaspoon vegetable oil)
  • 1 cup thin sliced yellow onions
  • 4 small apples (yellow delicious apples, pared cored & thinly sliced)
  • 1 cup apple cider (or apple juice)
  • 2 tablespoons apple brandy

How to Make

  • Step 1: In large nonstick skillet, heat oil; add chicken. Cook over medium-high heat, turning once, 4 minutes, until browned on all sides.

  • Step 2: Remove chicken from skillet; set aside.

  • Step 3: In same skillet, cook onions, stirring constantly, 5 minutes, until softened.

  • Step 4: Stir in apples; cook, turning apple slices occasionally, 3 minutes, until apples are golden brown and tender.

  • Step 5: Add cider to apple mixture; bring liquid just to a boil.

  • Step 6: Return chicken to skillet; cook, turning chicken as needed, 4 minutes, until chicken is cooked through and juices run clear when pierced with fork.

  • Step 7: With slotted spoon, transfer chicken to serving platter; keep warm.

  • Step 8: Stir brandy into apple mixture; cook 3 minutes, until mixture is bubbling and apples and onions are glazed.

  • Step 9: With slotted spoon, arrange apples and onions around chicken; drizzle evenly with remaining juices in skillet.
