"This is a recipe I make quite often, it is a great way to use up leftover rotisserie chicken. Use whatever vegetable combination you like in this recipe. If gluten intolerant make sure you are using gluten free oyster sauce."

Step by Step Method

Step 1

In a medium saucepan bring chicken stock, rice and butter to a boil; reduce temperature to medium-low, cover and let simmer until cooked, about 15 minutes; set aside and allow to cool.

Step 2

In a large skillet, drizzle the vegetable oil to cover bottom and heat on medium-high until hot.

Step 3

Toss in prepared vegetables and drizzle with oyster sauce and ginger.

Step 4

Cook until just a bit of moisture is left, stirring occasionally.

Step 5

Mix cooked rice and vegetable mixture together, add chicken and mix together well.

Step 6

Preheat oven to 350 degrees Fahrenheit oven.

Step 7

Coat a casserole dish with non-stick spray.

Step 8

Pour rice mixture into prepared dish, cover and bake for 30 minutes or until heated through.

Loved it :) never thought of baking fried rice before, but why not :) I used shrimp, since we have been eating quite a bit of chicken recently, didnt have the celery so used some zucchini instead, as you say, great for using up the bits and pieces in the fridge! used some red pepper too, for colour. I omitted the green peppers and used shrimp in place of the chicken and ended up with a really delicious rice that even my picky grandchildren loved!

Wonderful fried rice we all loved this, I never thought of using oyster sauce for fried rice and now wouldn't make it again without using it, we loved it with chicken next time I'll be trying it with beef or shrimp, thank you QueenBea
