Step 1

Preheat oven to 350°F.

Step 2

Saute onion and mushrooms in butter. Add broth and cook for 5 minutes.

Step 3

Put rice in a 1 1/2 quart casserole dish. Pour broth mixture over rice.

Step 4

Cover and bake 45-60 minutes.

I couldn't wait to try this rice and when my husband smelled it cooking he was like my shadow until I had it on the table ready to eat. I used brown rice to keep it diabetic friendly and it was delicious!
