Step by Step Method

Step 1

Preheat oven to 400 degrees Fahrenheit.

Step 2

Coat a baking dish with non-stick spray.

Step 3

Slice tomatoes into four slices each and place on baking dish, overlapping, and in two rows; sprinkle with salt and pepper and set aside.

Step 4

In a small bowl, mix together the mayonnaise and parmesan cheese.

Step 5

In another small bowl, mix together the basil and bread crumbs.

Step 6

Poke holes in the chicken breast with a fork, sprinkle with salt and pepper and place over the tomatoes.

Step 7

Coat with the mayonnaise mixture then sprinkle the bread crumb mixture over top.

Step 8

Cook uncovered for 25 to 30 minutes, until juices run clear when poking chicken with a fork. This could take a bit longer, depending on thickness of chicken pieces.

The chicken breast were so juicy and tender! Used panko bread crumbs, the fresh basil was lovely. Next time I think I will sprinkle some basil over the tomatoes before adding the chicken for an extra hit. Will see repeats here for sure! Thank you Bea for sharing.

This was very fast and very filling. I pounded the chicken thinner and it allowed the meat to absorb more of the flavors. Also I used Roma tomatoes and fresh basil. Delicious!

I liked this but didn't really care all that much for the mayonnaise. I would have liked it better without. It did make the chicken moist however, and I loved the breading flavor. I will make it again with a few changes to fit my taste. Thank you for sharing it with us Bea! Linda

Lovely flavour.nice moist chicken. I had to use dried basil and i used pumpernickel bread slices for the bread crumbs, made for nice crunching topping, with no fat mayo, turned out looking pretty with the tomato base. We enjoyed it and will be making it again, thanks for posting.
