Step 1: Preheat oven to 400 degrees Fahrenheit.
Step 2: Coat a baking dish with non-stick spray.
Step 3: Slice tomatoes into four slices each and place on baking dish, overlapping, and in two rows; sprinkle with salt and pepper and set aside.
Step 4: In a small bowl, mix together the mayonnaise and parmesan cheese.
Step 5: In another small bowl, mix together the basil and bread crumbs.
Step 6: Poke holes in the chicken breast with a fork, sprinkle with salt and pepper and place over the tomatoes.
Step 7: Coat with the mayonnaise mixture then sprinkle the bread crumb mixture over top.
Step 8: Cook uncovered for 25 to 30 minutes, until juices run clear when poking chicken with a fork. This could take a bit longer, depending on thickness of chicken pieces.
