"I have been making this recipe for quite a while. I love how moist the muffins are and then the top has a wonderful crumb crunch."
Beat mashed banana, sugar, egg and butter until mixed well.
Add dry ingredients to wet mixture and using a wooden spoon, stir until just moistened. Batter will be thick.
Spoon batter into greased muffin pan, filling almost to the top.
Make the topping and sprinkle topping over each muffin (about 1 1/2 tablespoons per muffin). Don't over do the topping, as it will keep your muffins from rising very high. (been there, done that).
Bake in a preheated oven at 350° for 18-20 minutes. Remove from oven and cool.
