"I have been making this recipe for quite a while. I love how moist the muffins are and then the top has a wonderful crumb crunch."

Step by Step Method

Step 1

Beat mashed banana, sugar, egg and butter until mixed well.

Step 2

Add dry ingredients to wet mixture and using a wooden spoon, stir until just moistened. Batter will be thick.

Step 3

Spoon batter into greased muffin pan, filling almost to the top.

Step 4

Make the topping and sprinkle topping over each muffin (about 1 1/2 tablespoons per muffin). Don't over do the topping, as it will keep your muffins from rising very high. (been there, done that).

Step 5

Bake in a preheated oven at 350° for 18-20 minutes. Remove from oven and cool.

Other than adding walnuts I made as directed and the muffins were moist and yummy! Great with amy morning coffee. Great addition to my muffin recipe rotation!

We love muffins around here and these were eaten up in no time! I added chunks of walnuts in the mixture and a sprinkling of nutmeg in with the streusel topping. Totally delicious!

I should have reviewed these months ago, but haven't been good about getting in here with my reviews, so let me say these are so delicious that we have them at least once a week. We will continue to enjoy them for a ery long time. The topping makes these a special tasting muffin and we love them!

My husband and I thoroughly enjoyed our breakfast this morning! These are so delicious and didn't take any time at all to get in the oven and on the table. Since we were both famished that was a plus for us!
