Step 1: Beat mashed banana, sugar, egg and butter until mixed well.
Step 2: Add dry ingredients to wet mixture and using a wooden spoon, stir until just moistened. Batter will be thick.
Step 3: Spoon batter into greased muffin pan, filling almost to the top.
Step 4: Make the topping and sprinkle topping over each muffin (about 1 1/2 tablespoons per muffin). Don't over do the topping, as it will keep your muffins from rising very high. (been there, done that).
Step 5: Bake in a preheated oven at 350° for 18-20 minutes. Remove from oven and cool.
