Ingredients

The ingredients are:
  • 4 bananas, mashed (very ripe)
  • 1 large egg
  • 3/4 cup granulated sugar
  • 1/3 cup butter, melted
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • CRUMB TOPPING
  • 1/4 cup brown sugar
  • 2 tablespoon all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon butter, melted

How to Make

  • Step 1: Beat mashed banana, sugar, egg and butter until mixed well.

  • Step 2: Add dry ingredients to wet mixture and using a wooden spoon, stir until just moistened. Batter will be thick.

  • Step 3: Spoon batter into greased muffin pan, filling almost to the top.

  • Step 4: Make the topping and sprinkle topping over each muffin (about 1 1/2 tablespoons per muffin). Don't over do the topping, as it will keep your muffins from rising very high. (been there, done that).

  • Step 5: Bake in a preheated oven at 350° for 18-20 minutes. Remove from oven and cool.
