Step by Step Method

Step 1

Fry the bacon in the butter.

Step 2

Add garlic.

Step 3

Dredge chicken in flour. Add to the oil; brown. Add wine. Add salt and pepper. Add artichokes that have been chopped along with juice.

Step 4

Mix flour to chicken broth. Add to pan. Add capers, Cook till chicken is done.

Step 5

Just before serving, add tomato and spinach.

So good!! The component ingredients are amazing together. I also loved the cooking technique. The chicken had a nice crispy coating and the sauce was the perfect thickness. I served this over rice and thought this was company worthy. It's going into my Best of 2022 file. A few notes for when I make it next time: use artichokes in the flavored oil and reserve that oil to use later in the directions (I used canned artichokes in water and drained/didn't save the liquid because I didn't read ahead), save the flour after dredging the chicken because it is used to thicken the sauce later (again, I didn't read ahead and was cleaning as I went along and threw away the dredging flour - so had to get out some new flour and guess at the amount that would be left over), and last is to salt and pepper the chicken before searing it (I salt and peppered the entire dish as per directed but thought the chicken itself didn't get that nice salt and pepper flavor on its own).

Another one of Dee's that's going right into the Best Of category! This is so good and it's already a favorite. The artichoke liquid makes for an excellent paring with the wine and broth and though I didn't serve it with rice, it would be excellent served with it. Don't tell anyone, but I drank some of the sauce. That good! Thank you, Dee, for sharing. Made it for Best of 2021 as recommended by NWG.

This was exceptionally good. The artichokes are a great addition to the dish, but the garlicky bacon clung to the chicken breasts during the sauteing step and gave it a great flavor base! I served it with roasted potatoes and mixed vegetables. I'd definitely make this again. Thanks, dienia b.
