Ingredients

The ingredients are:
  • 7 tablespoons butter
  • 1 bacon slice (finely minced)
  • 1 garlic clove, finely minced
  • 4 boneless chicken breasts
  • 12 ounces artichoke hearts (1 can)
  • 1/3 cup all-purpose flour
  • Salt and pepper
  • 1 cup chicken broth
  • 1 cup white wine
  • 1/4 cup chopped fresh spinach
  • 1/4 cup chopped tomatoes
  • 1 tablespoon capers

How to Make

  • Step 1: Fry the bacon in the butter.

  • Step 2: Add garlic.

  • Step 3: Dredge chicken in flour and add to the oil; brown.

  • Step 4: Add wine, salt and pepper, and artichokes that have been chopped along with juice.

  • Step 5: Mix flour into chicken broth, add to pan with capers; cook until chicken is done.

  • Step 6: Just before serving, add tomato and spinach.
