Step 1

Cut the chicken into match stick like pieces.

Step 2

Toss with 2 teaspoons cornstarch, soy sauce and 1 tablespoon oil.

Step 3

Let stand 10 minutes.

Step 4

Mix remaining cornstarch with mushroom liquid.

Step 5

Add remaining oil; heat.

Step 6

Add chicken, garlic, and ginger.

Step 7

Cook for 1 minute, stirring constantly; do not let the chicken brown.

Step 8

Add mushrooms.

Step 9

Add liquid.

Step 10

Cook for 5 minutes until thickened; do not overcook.

I made this as per recipe but with one little oops moment in that when we do stir fries more often than not we add chilli and or garlic and I had some there which was supposed to be for the side dish but I put it into the chicken (just cut up some more for the side) and served with rice and broccolini. My two chicken breasts came to 500 grams and I have about a third of the chicken left over for the freezer. Dh has already requested to have again. Thank you dienia b for a delicious and quick dinner, made for Alphabet Tag Game at FF&F.
