Step by Step Method

Step 1

Cook linguine according to package directions.

Step 2

Meanwhile, in a large skillet, heat butter and oil over medium heat.

Step 3

Add zucchini and mushrooms; saute 3-5 minutes.

Step 4

Add tomato, onions, garlic and seasonings.

Step 5

Reduce heat; simmer, covered, about 3 minutes.

Step 6

Drain linguine; add to vegetable mixture.

Step 7

Sprinkle with cheeses and basil and toss to coat.

I cut the recipe down to two servings and was pleasantly surprised at how much this made...normally each person gets 2 ounces of pasta...I subbed sun dried tomatoes (not the ones in oil) for the tomato because I forgot I had used my tomato in another dish...we enjoyed the flavors this offered...and we loved the basil in the dish...the mushrooms give it a meaty texture for those who are true vegetarians...I served my Firecracker Salmon (#36081) as a protein...made for "Billboard" tag game...thanks for sharing the recipe...
