Vegemite Toad In The Hole

"Another Vegemite Recipe for those Vegemite lovers out there!! I did not use as much cheese as stated but have posted this (Kraft) recipe as written, but it doesn't get any more Aussie for breaky than this one."

Step 1

Cut a 5cm round hole from the centre of each slice of bread using a biscuit or scone cutter and reserve for another use such as breadcrumbs.

Step 2

Spread one side of each slice with butter and Vegemite, then place buttered side up on a paper lined baking tray.

Step 3

Sprinkle ¾ cup of the cheese over the bread then top each with another slice of bread. Crack an egg into each hole. Sprinkle over remaining cheese.

Step 4

Bake in a hot oven 200°C for 15-20 minutes or until egg is cooked and cheese is golden.

Step 5

Serve immediately.

What a breakfast sandwich this was I did use mozzarella cheese instead of tasty but just love that gooey quality and creaminess of mozzarella with the salty taste of the vegemite and crunch of the toasted bread. I only meant to cook mine at 175C fan forced for 12 minutes to have a gooey centre to the egg but the timer didn't go off and I guess they were in there for about 15 to 18 minutes but was still ever so enjoyable.
