"Another Vegemite Recipe for those Vegemite lovers out there!! I did not use as much cheese as stated but have posted this (Kraft) recipe as written, but it doesn't get any more Aussie for breaky than this one."

Step by Step Method

Step 1

Cut a 5cm round hole from the centre of each slice of bread using a biscuit or scone cutter and reserve for another use such as breadcrumbs.

Step 2

Spread one side of each slice with butter and Vegemite, then place buttered side up on a paper lined baking tray.

Step 3

Sprinkle ¾ cup of the cheese over the bread then top each with another slice of bread. Crack an egg into each hole. Sprinkle over remaining cheese.

Step 4

Bake in a hot oven 200°C for 15-20 minutes or until egg is cooked and cheese is golden.

Step 5

Serve immediately.

What a breakfast sandwich this was I did use mozzarella cheese instead of tasty but just love that gooey quality and creaminess of mozzarella with the salty taste of the vegemite and crunch of the toasted bread. I only meant to cook mine at 175C fan forced for 12 minutes to have a gooey centre to the egg but the timer didn't go off and I guess they were in there for about 15 to 18 minutes but was still ever so enjoyable. Thank you Tisme made for Pick Me tag game.
