Step by Step Method

Step 1

Heat an oiled, large, non-stick frying pan over a medium to high heat and add bacon and cook, turning occasionally, for about 5 minutes, or until crisp and then drain on absorbent kitchen paper.

Step 2

To assemble, spread butter over one side of four of the bread slices.

Step 3

Spread cranberry sauce over two of the buttered bread slices and divide turkey and bacon over top and then place the other two buttered bread slices, facing down, over bacon.

Step 4

Divide avocado, cheese, tomato and lettuce leaves over top of turkey and bacon sandwiches.

Step 5

Spread mayonnaise over one side of the remaining two bread slices and place bread, mayonnaise-side down, over lettuce.

Step 6

Using a serrated knife, cut sandwiches in half diagonally and secure with toothpicks.

Step 7

TIP - your can replace turkey with chicken or use your favourite cheese instead of cheddar if you so wish.

Great tasting sandwich for that leftover Thanksgiving turkey! The bacon adds a great flavor element. I have an avocado thief at my house, so didn't wind up using it, but can see it would add that avocado butteriness that we like so much. Well, next time, I will be adding it. A great club sandwich all around! Thanks so much for sharing Pat.
