Ingredients

The ingredients are:
  • 90 grams bacon (rind removed, cut into thirds, 3 middle cut rashers specified)
  • 25 grams butter (spreadable)
  • 180 grams wholegrain bread (6 large slices specified)
  • 2 tablespoons cranberry sauce
  • 120 grams turkey breast (sliced)
  • 1 avocado, sliced (small)
  • 120 grams cheddar cheese
  • 1 tomato, sliced (large)
  • 1 head lettuce (baby cos lettuce, trimmed, leaves separated)
  • 1/4 cup mayonnaise (whole mayonnaise)

How to Make

  • Step 1: Heat an oiled, large, non-stick frying pan over a medium to high heat and add bacon and cook, turning occasionally, for about 5 minutes, or until crisp and then drain on absorbent kitchen paper.

  • Step 2: To assemble, spread butter over one side of four of the bread slices.

  • Step 3: Spread cranberry sauce over two of the buttered bread slices and divide turkey and bacon over top and then place the other two buttered bread slices, facing down, over bacon.

  • Step 4: Divide avocado, cheese, tomato and lettuce leaves over top of turkey and bacon sandwiches.

  • Step 5: Spread mayonnaise over one side of the remaining two bread slices and place bread, mayonnaise-side down, over lettuce.

  • Step 6: Using a serrated knife, cut sandwiches in half diagonally and secure with toothpicks.

  • Step 7: TIP - your can replace turkey with chicken or use your favourite cheese instead of cheddar if you so wish.
