Step by Step Method

Step 1

Preheat the oven to 180C.

Step 2

Line an oven tray with baking paper.

Step 3

Cut the tops off the capsicums and remove and discard the membrane and seeds.

Step 4

Divide the spinach and divide between the capsicums and then crack an egg into each capsicum.

Step 5

Place the filled capsicums on the lined tray and roast for 20 to 30 minutes or until the eggs are cooked.
