Step 1: Preheat the oven to 180C.
Step 2: Line an oven tray with baking paper.
Step 3: Cut the tops off the capsicums and remove and discard the membrane and seeds.
Step 4: Divide the spinach and divide between the capsicums and then crack an egg into each capsicum.
Step 5: Place the filled capsicums on the lined tray and roast for 20 to 30 minutes or until the eggs are cooked.
