Step by Step Method
Step 1
To make the dough: combine the first 5 ingredients plus 1 cup water (-olive oil) to make a soft dough. If the dough is dry add more water until it is soft and uniform.
Step 2
Knead the dough using a mixer with dough hook for 5 minutes or by hand for 6-8 minutes. Stir in cheeses and mix until combined.
Step 3
Cover dough and let rise for 2 hours or until puffy.
Step 4
Punch down dough and shape into a 14 inch log or into two rounds. Cover with plastic wrap and let rise for 1 hour until puffy.
Step 5
Preheat oven to 425 degrees F.
Step 6
Uncover bread and spray with water and then use a knife to cut 1/2 inch slashes in top of loaf(loaves).
Step 7
Bake for 40 minutes (smaller loaves for 30 minutes) or until bread is golden brown . Remove from oven and let cool before slicing.
