Ingredients

The ingredients are:
  • 8 1/2 ounces all-purpose flour (2 cups)
  • 5 3/4 ounces semolina (1 cup)
  • 2 teaspoons yeast
  • 1 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 8 to 9 ounces water (1 to 1 1/8 cups lukewarm)
  • 3 1/2 ounces Parmesan cheese (grated, 1 cup)
  • 4 ounces provolone cheese (diced, 1 cup)
  • 4 ounces Asiago cheese (diced, 1 cup)

How to Make

  • Step 1: To make the dough: combine the first 5 ingredients plus 1 cup water (-olive oil) to make a soft dough. If the dough is dry add more water until it is soft and uniform.

  • Step 2: Knead the dough using a mixer with dough hook for 5 minutes or by hand for 6-8 minutes. Stir in cheeses and mix until combined.

  • Step 3: Cover dough and let rise for 2 hours or until puffy.

  • Step 4: Punch down dough and shape into a 14 inch log or into two rounds. Cover with plastic wrap and let rise for 1 hour until puffy.

  • Step 5: Preheat oven to 425 degrees F.

  • Step 6: Uncover bread and spray with water and then use a knife to cut 1/2 inch slashes in top of loaf(loaves).

  • Step 7: Bake for 40 minutes (smaller loaves for 30 minutes) or until bread is golden brown . Remove from oven and let cool before slicing.
