Step by Step Method

Step 1

Preheat oven to 400°F.

Step 2

Line a large rimmed baking sheet with foil. Oil foil or coat with non-stick spray. Season with salt and pepper. Bake until skin is crispy, stirring once or twice, about 1-1 1/2 hours. While wings bake, make the sauce and dip.

Step 3

To a large bowl, add chili sauce, fish sauce, Sriracha, and lime zest; mix well. Transfer half of the sauce to a small bowl; stir in green onion and set aside to serve as the dip. To the large bowl, add garlic.

Step 4

Transfer baked wings to the large bowl with sauce and mix until wings are coated with sauce.

Step 5

Return the coated wings to the baking sheet and place in the oven. Bake another 10 minutes, until the sauce begins to caramelize.

Step 6

Transfer wings to a large platter. Squeeze lime halves over wings. Garnish platter with cilantro sprigs and serve with dip.

Was checking the Photo Forum for new ideas for the drumettes and homemade Caesar Salad planned for lunch, the photo had me print the recipe to use on my chicken drumettes. Daughter and I loved the Thai-Style sauce, a real winner. Recipe added to my Favourites Cookbook and to a copy close at hand in my recipe drawer.

Lovely wings with pronounced Thai flavors. These have a whole lotta good flavor all around that we all enjoyed. Because my son doesn't like anything onion, I didn't add the scallions to the sauce, but rather sprinkled it along with cilantro over the top of the wings for those of us who do like scallions. I'm doggy-earing this recipe to make again. Thanks a bunch Teresa for sharing. Made it "For Your Consideration" tag game.
