Swiss Smoked Salmon Omelet

Step 1

In small bowl, blend eggs, milk, pepper and salt.

Step 2

In 10-inch skillet, melt butter over medium heat.

Step 3

Pour egg mixture into skillet.

Step 4

Cook until eggs are set, about 5 minutes, lifting edges occasionally with spatula and letting liquid run under edges.

Step 5

Sprinkle salmon and cheese over one half of the omelet.

Step 6

With spatula, carefully fold other half over filling.

Step 7

Cook until cheese melts, 1-2 minutes.

Very easy straightforward tasty omelet. My local grocer has just started smoking a variety of products - salmon being one of them. I had saved this recipe and when I saw the local smoked salmon I thought "Yes" and I am glad I did. The fish is a natural with the eggs. I used cumin Swiss cheese. We'll be having this agin for Sunday Brunch.

I made half a recipe in an 8" skillet - perfect for one serving, and just right to use up the rest of my smoked salmon. Nice light breakfast :) For Culinary Quest.

This was really very tasty; rich, while not being heavy. I doubled the ingredients to serve more people and added some chopped chives for color (I also just love their flavor). The gruyere was perfect with the salmon. Made for Culinary Quest 2015 by a Toasted Tourist.

Really nice omelet. I don't make them all that often and have never bought gruyere cheese before. The smoked salmon and cheese ands a lot of flavor.
