  • 4 large eggs
  • 2 tablespoons half and half (or milk)
  • 1/8 teaspoon pepper
  • Salt, to taste
  • 1 tablespoon unsalted butter
  • 1/2 cup flaked smoked salmon
  • 1/3 cup shredded gruyere cheese

How to Make

  • Step 1: In small bowl, blend eggs, milk, pepper and salt.

  • Step 2: In 10-inch skillet, melt butter over medium heat.

  • Step 3: Pour egg mixture into skillet.

  • Step 4: Cook until eggs are set, about 5 minutes, lifting edges occasionally with spatula and letting liquid run under edges.

  • Step 5: Sprinkle salmon and cheese over one half of the omelet.

  • Step 6: With spatula, carefully fold other half over filling.

  • Step 7: Cook until cheese melts, 1-2 minutes.
