This is a quick and easy cucumber salad recipe. Cool and refreshing side dish on a hot summer night. I made exactly as directed and it was delicious!

Loved this salad. The right amount of heat and no sugar, which is a nice change from the sweet cucumber salads we often eat. I added a wee bit less dill but otherwise followed as directed. Made for the AmaZ'ing Race 2023 (Thailand).

Used fresh dill in this, and like that there is no sugar in the recipe - it came out great. Your suggestion of adding peanuts is a good one, I will have to try that next time. Thanks!
