"I came across this on a recipe site and adjusted it to our liking...we love it...you can serve this as a lunch for one or an appetizer for two."

Step by Step Method

Step 1

Melt butter in a frying pan over medium-low heat.

Step 2

Spread the chili paste on one side of one tortilla and set aside.

Step 3

Place the other tortilla in pan with butter.

Step 4

Layer on 3/4 cup cheese, chicken, jalapeño peppers, tomatoes and lettuce.

Step 5

Allow cheese to melt and set tortilla on a plate.

Step 6

Place the other tortilla with chili paste on the pan paste side up and top with 1/4 cup cheese and allow to melt.

Step 7

Place on top of the tortilla with chicken and then place the "sandwich" back in the pan for 1-2 minutes to allow the 2 sides to melt together.

Step 8

Slice, stack and enjoy!

I made this for lunch today but in going to get the ingredients with the exception of pickled peppers which I could not source I discovered I did not have sambal oelek so used a very hot chilli paste given to me by a neighbour and I know it has 7 different chillies in it and three are ghost pepper, scotch bonnet and jalapeno and only used a teaspoon past experience has taught me it is super hot and then went to get the iceberg lettuce and it has disappeared so used baby spinach and chopped up some red and yellow cherry tomatoes for the tomatoes and proceeded to cook as per recipe and thoroughly enjoyed. Yummy quesadilla's. I made plain ones with only the cheese, chicken, jalapeno and hot sauce (because that's how my son likes them) and made others that contained all the noted ingredients plus some extras such as pickled onion, parsley, green onions. The possibilities are endless. A do again. Thank you Teresa for sharing.

Loved these! My grandson raved and asked for a repeat next Sunday for the football game. They were a little messy 'flipping' but I have a feeling that I'll get that process nailed down as often as we plan on having them. lol. Thanks for sharing this great keeper, Teresa. Made for FYC tag.
