Step by Step Method

Step 1

Drizzle chicken pieces with hot sauce and rub well into each piece; refrigerate for a couple of hours.

Step 2

Combine remaining ingredients, except for chicken, in a plastic bag.

Step 3

Place chicken pieces, one at a time in breading bag and toss to coat.

Step 4

Shake excess coating off chicken and place on a foil lined baking sheet, skin side up.

Step 5

Spray the chicken pieces lightly with cooking spray.

Step 6

Bake at 350 degrees Fahrenheit, for 50 minutes to 1 hour, or until cooked through.

I made this recipe tonight. My family likes REALLY hot/spicy food, so my only substitution was sriracha sauce instead of Franks Red Hot. It was fantastic! Thank you very much for posting this recipe

Perfect amount of heat in this chicken. I did sub the salt & pepper with 1/2 tsp lemon pepper. Other than that, I would not change a thing. UPDATE 9/29/23: This still remains one of our favourite chicken recipes. This time I used 2 very large thighs and the timing was perfect! Thanks Bea for a lovely dinner! Very nice thighs, love the bit of heat and with the breading it stayed lovely and moist inside while the outside was deliciously crispy. Will certainly be making this one again.

I doubled the recipe and did a whole fryer chicken. I baked everything for 1 hour. I loved the hot sauce and cayenne in with the other spices. It gave it a nice little zing to the crispy skin, which I liked very much. My neighbor came over and ate with me and she loved it too. We both like a little heat so this really hit the spot for us. I had it along with some a tomato and cucumber salad and some homemade potato salad. This will definitely be repeated. Thanks Bea for another tasty variation for baked chicken! Linda

Delicious moist and flavorful chicken recipe. With that said I omitted the hot sauce and the cayenne pepper as DH can't tolerate either. Dipped them in ranch salad dressing. Otherwise it was made as written. Made for Billboard tag.
