Step 1

Heat the oil in a large frying an over medium high heat and cook the SPAM for 2 minutes each side or until golden.

Step 2

Meanwhile cook the egg in the pan for 2 to 3 minutes until cooked to your liking.

Step 3

Spread one slice of toast with the mayonnaise and place on a serving plate and tp with lettuce, cheese, SPAM and egg and spread the remaining toast with mustard and place over the egg to serve.

I can't remember when I last bought a tin of Spam and now I wonder why! This was absolutely delicious. I served them open face because having the recipe for brunch I wanted 2 eggs and they wouldn't fit in one sandwich. I will one making this recipe again to enjoy a nearly forgotten "Spam". Thanks Pat for posting this recipe.
