Step 1

Gently melt butter in a pan over medium-high heat and add olive oil and asparagus and cook for approximatel5 minutes, turning asparagus to ensure even cooking and season with salt and pepper to taste.

Step 2

Chop avocado and crumble fet into a bowl, adding a squeeze of lemon juice.

Step 3

Lightly toast bagels.

Step 4

Spread avocado and feta mixture on bagel half, then add the sparagus and top with a generous serving of smoked salmon.

Step 5

OPTIONAL - add a dollop of haollandaise, sprinkle of seas salt and micro herbs to serve.
