Ingredients

The ingredients are:
  • 200 grams smoked salmon (thinly sliced)
  • 320 grams asparagus (2 bunches), halved
  • 120 grams bagels (2 bagels), halved
  • 1 avocado, chopped
  • 1/2 cup Feta, crumbled
  • 1/2 lemon, juiced
  • 1 tablespoon butter (or olive oil)
  • Salt
  • Pepper

How to Make

  • Step 1: Gently melt butter in a pan over medium-high heat and add olive oil and asparagus and cook for approximatel5 minutes, turning asparagus to ensure even cooking and season with salt and pepper to taste.

  • Step 2: Chop avocado and crumble fet into a bowl, adding a squeeze of lemon juice.

  • Step 3: Lightly toast bagels.

  • Step 4: Spread avocado and feta mixture on bagel half, then add the sparagus and top with a generous serving of smoked salmon.

  • Step 5: OPTIONAL - add a dollop of haollandaise, sprinkle of seas salt and micro herbs to serve.
