"Easy omelet and very tasty. If you don't want Mozzarello cheese use your favorite. The recipe was originally from uk-recipes, modified by me. If you are not a spice hound use mild or medium salsa. If you are making this omelet for 2 use 3 eggs."

Step by Step Method

Step 1

Heat a skillet and spray lightly with oil, stir fry the mushrooms and peppers for 3 minutes, remove from skillet

Step 2

Beat together the eggs, cottage cheese, milk, flour, baking powder, salt. pepeer and oregano

Step 3

Lightly spray the skillet with oil and pour in the egg mixture, medium heat, cover with lid cook for about 2 minutes

Step 4

Swish the eggs around by tilting the pan so they cover the pan evenly, add the mushrooms, peppers and cheese. Cover

Step 5

Continue cooking for about another 3 minutes or until set. Be carfule not to burn the botton

Step 6

Fold the omelet over, place on plate add the salsa and enjoy

I think my pan was on the hot side...next time I'll make sure and lower the temp a bit more...that happens when you use cast iron...we loved the flavors and I really enjoyed how the omelet puffed up a bit while it cooked...I used a 10 inch pan and it cooked in the allotted time suggested...thanks for sharing your recipe...

Derf

The combination of flavourful filling in this omelette is delicious, love it! I have never used milk, flour and baking powder in my omelettes but i went ahead and tried it this time, sorry but i don't care for it, to be honest i thought i was eating a filled pancake. BUT, it was delicious, ( I love pancakes! )  loved the filling but another time i will leave out the milk,  flour and baking powder. Mine didn't cook in the time suggested, I had to finish it in the oven, even with all that I still think is was a 5 star cus the flavour combination was delightful.  I forgot to mention, the only pepper i had was a jalepeno, just a nice little bite to match the salsa ):
