" Wonderful appetizer that will be enjoyed as a starter to a greek meal or any time. Serve lots of lemon wedges and pita bread. Use a good quality greek cheese. Here are three different ones - Krinos Kefalograviera, Kasseri and Graviera. There are others that may be easier to find. In a pinch use Italian Provolone but it is not the same."

Step by Step Method
Step 1
Slice the cheese into 2 inch squares by 1/2 inch thick
Step 2
Dampen the squares with water and dredge them in the flour
Step 3
Heat the oil in a heavy skillet, medium heat, fry the cheese pieces, turning once after 2 to 3 minutes. They should be golden on both sides and just beginning to melt
Step 4
Serve immediately with pita and lemon wedges
