Step by Step Method

Step 1

Preheat oven to 450°F.

Step 2

Spread 4 tablespoons of butter over meat.

Step 3

Sprinkle with salt and pepper.

Step 4

Place in a shallow roasting pan and roast for 15 minutes, or until lightly browned.

Step 5

Reduce heat to 350°F.

Step 6

Add water and continue to cook until meat is tender, 2 1/2 to 3 hours, basting frequently.

Step 7

Remove meat to a platter and keep warm.

Step 8

In a skillet, melt 1 tablespoon of butter.

Step 9

Stir in flour.

Step 10

Gradually stir in pan drippings.

Step 11

Cook over low heat, stirring constantly, until smooth and thickened.

Step 12

Stir in sour cream and cheese.

Step 13

Continue cooking until cheese melts.

Step 14

Add remaining butter and remove pan from heat, stirring until butter melts.

Step 15

Serve sauce over meat.
