Step by Step Method
Step 1
Preheat oven to 400 degrees F.

Toss the chicken with two tablespoons olive oil, cumin and the curry powder.

Lay on a baking sheet and roast until cooked through (35-40 minutes).

While the chicken is cooking, toss the remaining ingredients in a bowl and mix well. Chill.
