Step by Step Method

Step 1

Cook pasta in boiling salted water until desired texture.. Drain and transfer to a large serving bowl.

Step 2

Heat olive oil in a large frying pan, add garlic and mushrooms, and cook until softened, about 5 minutes. Add cream cheese and milk and heat until boiling, stirring often. Add spinach and cook until wilted, about 3 minutes.

Step 3

Season to taste with salt and pepper, then pour over pasta. Sprinkle with chives and serve with parmesan on the side.

I cut the recipe in half and there was still too much for the two of us, but will be gobbled up for lunch today. DH really liked this and that is saying something cus he is not a pasta fan. Loved the flavour and it is easy and quick, i just happened to have all the ingredients in. i used fresh chives from the garden, they do make a very nice finish with the parmesan. a very pleasant way to serve spinach! I used wide noodles, another time i will use a smaller/thinner type of pasta, thanks for posting.
