Ingredients

The ingredients are:
  • 8 ounces dry pasta (regular or whole-wheat)
  • 3 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 pound fresh sliced mushrooms
  • 8 ounces cream cheese, softened
  • 1/2 cup milk
  • 8 cups fresh spinach (lightly packed spinach leaves)
  • Salt and freshly ground black pepper
  • 1/4 cup chopped fresh chives
  • Salt & pepper
  • 1/2 cup grated parmesan cheese

How to Make

  • Step 1: Cook pasta in boiling salted water until desired texture.. Drain and transfer to a large serving bowl.

  • Step 2: Heat olive oil in a large frying pan, add garlic and mushrooms, and cook until softened, about 5 minutes. Add cream cheese and milk and heat until boiling, stirring often. Add spinach and cook until wilted, about 3 minutes.

  • Step 3: Season to taste with salt and pepper, then pour over pasta. Sprinkle with chives and serve with parmesan on the side.
