Step 1

Dice cucumber, red pepper, jalepeno, black olives, mix in a small bowl. Add seafood cocktail sauce and mix well. Divide mix between 6 crackers.

Step 2

Cut each prawn into three pieces; top the mix on each cracker with 3 pieces of prawn. Serve and enjoy!

These are such a healthy appetizer and so good I would give them a 10 out of 5! I used a perfect cracker for them Finn crisp extra thin caraway. The flavours exploded. I used my Mini chopper for all the veggies took minutes, steamed my prawns in the AM (I had some extra so steamed them as well, only steamed until pink - 3 minutes) and put them in the fridge. 5 minutes before serving I loaded the crackers with the veggies added the prawns and BOY did we ever enjoy your recipe. Do not load the crackers until just before serving or they will get soggy. Loved our 3PM Sunday appetizer thanks Derf
