Step by Step Method

Step 1

Place the mayonnaise and custard in a bowl and mix well to combine.

Step 2

Spread one side of each slice of bread with butter and the other side with the maonnaise mixture.

Step 3

Divide the cheese, pickle and pastrami between 4 slices of bread, ensuring the buttered side is on the outside, and sandwich with the remaining bread, once again ensuring buttered side is on the outside.

Step 4

Heat a large non stick frying pan over low heat.

Step 5

Cook the sandwiches, in batches for 3-4 minutes each side or until golden and cheese is melted.

I toasted the bread and warmed the pastrami in the microwave instead of cooking this on the stove top because I wanted to add tomatoes and didn't want them soggy. Other than that, I used all the ingredients as listed. This was fantastic!!

I had a friend coming over and wanted to whip up something for lunch, so I chose this sandwich. I served chips and dill pickles on the side. It is a great tasting sandwich and we both agreed it's a keeper to have again. I did use whole grain bulkie rolls instead of the bread for diabetic purposes, and just turned them inside out so the flat side was on the outside, and they were a good substitute.
