Step by Step Method

Step 1

Preheat oven to 375F.

Step 2

Brown mushrooms and onion in butter in a nonstick oven safe skillet.

Step 3

Whisk together the herbs, salt, pepper, eggs and almond milk.

Pour over mushrooms and stir gently.

Step 5

Sprinkle the mixture with cheese.

Step 6

Sprinkle lightly with smoked paprika.

Bake 35 minutes until puffy and set.

This is great! We used regular white mushrooms and a bit more cheese but otherwise made as directed for a wonderful light dinner which everyone enjoyed. Thanks for sharing!
