Step by Step Method

Step 1

Microwave cauliflower with water for 10-15 minutes until VERY soft. Drain, then mash with potato masher.

Step 2

Blend in butter and cream cheese.

Step 3

Add the shredded cheese (reserving about 1/2 cup) and remaining ingredients, and stir together.

Step 4

Put in a casserole dish, and top with remaining shredded cheese.

Step 5

Bake at 350 degrees for 20 minutes, or until brown and bubbly.

Wow! I can't stop eating this! Is supposed to be side dishes for tomorrow... I cooked a little too long on the stovetop, so it was more like mashed potatoes; I didnt bake it and it was awesome! Also, I used crumbled goat cheese instead of cream cheese and it gave a little tang. So good...

Wow, the best cauliflower mash I have had! I usually only cook with fresh vegetables, but Trader Joe's makes a frozen riced cauliflower that has a great taste, so I used that, and it saved me several steps. This contains all the richness and deliciousness of a full fat dish, even with my having added only half the light butter and bacon. All the flavors blend wonderfully in this, and the cheeses and bacon really make it super. The serving size is a little skimpy though, we each ate "two" servings as a veggie side dish with our meal.
