Ingredients

The ingredients are:
  • 1 bag (16 ounce) frozen cauliflower
  • 2 tablespoons reduced-fat butter (with canola oil like Land O Lakes brand spreadable)
  • 4 ounces low-fat cream cheese (softened, 1/3 less fat)
  • 1 pound turkey bacon (cooked crispy, and crumbled)
  • 8 ounces low-fat cheddar cheese, shredded (sharp,low fat)
  • 2 tablespoons green onions, chopped
  • 2 tablespoons water

How to Make

  • Step 1: Microwave cauliflower with water for 10-15 minutes until VERY soft. Drain, then mash with potato masher.

  • Step 2: Blend in butter and cream cheese.

  • Step 3: Add the shredded cheese (reserving about 1/2 cup) and remaining ingredients, and stir together.

  • Step 4: Put in a casserole dish, and top with remaining shredded cheese.

  • Step 5: Bake at 350 degrees for 20 minutes, or until brown and bubbly.
