Step 1: Microwave cauliflower with water for 10-15 minutes until VERY soft. Drain, then mash with potato masher.
Step 2: Blend in butter and cream cheese.
Step 3: Add the shredded cheese (reserving about 1/2 cup) and remaining ingredients, and stir together.
Step 4: Put in a casserole dish, and top with remaining shredded cheese.
Step 5: Bake at 350 degrees for 20 minutes, or until brown and bubbly.
