"So easy, and a nice alternative to mashed potatoes. I treat them pretty much the same way. You can add broth, cream, cheese, and bacon, etc; anything that you would usually add to your mashed potatoes. I like this recipe because it is still low fat. Even though It does have cream cheese, I use low fat and it is divided among the entire dish. It is just a nice change and just as easy to make."

Step by Step Method

Step 1

Cauliflower ... Cook the cauliflower in a large pot of salted boiling water until tender. Drain and remove to a medium size bowl.

Step 2

Puree ... I prefer to use a food processor to puree the cauliflower, but you can also use a potato masher, if you want a chunkier texture. In the food processor, pulse several times until the cauliflower is pureed smooth. Then, add in the cream cheese, horseradish, salt, pepper and a little broth and pulse a few times to combine everything. If you want the cauliflower a bit creamier, add in the rest of the broth. Taste for any additional seasoning.

Step 3

Serve ... Garnish with fresh chives. Bacon, cheese, scallions are also great garnishes. ENJOY!

I would never try to pass these off as mashed potatoes (warning to parents). That said, these were tasty and easy. Used Greek yogurt instead of cream cheese (used what we had) with garlic and Parmesan. Very good.

Bergy

Cauliflower is an amazing vegetable, so versatile. This is a very tasty easy recipe. The horseradish gives it a punch and the cream cheese (lite) a smoothness. I mashed the cauliflower first but thougt no KC is right use a chopper (food processor) so I redid it, put it in a casserole and reheated it for 20 minutes.
