Ingredients

The ingredients are:
  • 2 pound head cauliflower (cut in florets)
  • 1/2 cup chicken broth (or vegetable broth)
  • 1 tablespoon low-fat cream cheese (softened)
  • 1 to 2 tablespoons prepared horseradish (i use 2, but go easy if you want)
  • 1/2 teaspoon kosher salt (to taste)
  • 1/4 teaspoon pepper, to taste (white pepper, if you want to keep it all white)
  • Garnish
  • Fresh chopped chives

How to Make

  • Step 1: Cauliflower ... Cook the cauliflower in a large pot of salted boiling water until tender. Drain and remove to a medium size bowl.

  • Step 2: Puree ... I prefer to use a food processor to puree the cauliflower, but you can also use a potato masher, if you want a chunkier texture. In the food processor, pulse several times until the cauliflower is pureed smooth. Then, add in the cream cheese, horseradish, salt, pepper and a little broth and pulse a few times to combine everything. If you want the cauliflower a bit creamier, add in the rest of the broth. Taste for any additional seasoning.

  • Step 3: Serve ... Garnish with fresh chives. Bacon, cheese, scallions are also great garnishes. ENJOY!
