Step 1: Cauliflower ... Cook the cauliflower in a large pot of salted boiling water until tender. Drain and remove to a medium size bowl.
Step 2: Puree ... I prefer to use a food processor to puree the cauliflower, but you can also use a potato masher, if you want a chunkier texture. In the food processor, pulse several times until the cauliflower is pureed smooth. Then, add in the cream cheese, horseradish, salt, pepper and a little broth and pulse a few times to combine everything. If you want the cauliflower a bit creamier, add in the rest of the broth. Taste for any additional seasoning.
Step 3: Serve ... Garnish with fresh chives. Bacon, cheese, scallions are also great garnishes. ENJOY!
