"A lovely Italian dessert. This is from a very old Italian cookbook, which I have had for years. I would not make this at first as the eggs are not cooked, but after making and tasting this I was hooked."

Step by Step Method
Step 1
Beat the egg yolks with the sugar until light and frothy, soft and creamy then beat the egg whites until they stand in stiff peaks.
Step 2
Add the mascarpone cheese to the egg yolks, mix well and then add the brandy. Gently fold in the egg whites.
Step 3
Put the coffee into another bowl with the milk and dip the sponge fingers briefly into the mixture and use them to line 6 individual glasses (a goblet shape glass dish is perfect for this if available).
Step 4
Pour the cheese mixture on top and decorate with grated chocolate.
Step 5
Cover with plastic wrap and refrigerate until ready to serve.
